This week, Coeliac UK is running a campaign to raise the awareness of coeliac disease. They are inviting people who are used to eating a normal diet to take up the gluten free challenge and go without gluten for a week. In particular, highlighting the issues people have when eating out.
It's not always easy to find 'free from' food when you're out is it? Obviously, the ideal scenario would be for every menu to have allergy friendly options but this is often the exception rather than the norm.
At home though, of course it's a different matter and this week I've got a gluten, dairy and egg free chocolate chunk cookie recipe for you to try. The cookies have an oaty biscuit base, made with gluten free oats, and are studded with chunks of dark chocolate. I like to chop a bar of chocolate into chunks as you get a lovely blend of chocolate shards and larger chunks, but feel free to use chocolate chips if you prefer.
