Pancake Day falls on the 12th February this year. As a child, it used to be one of the highlights of the school lunch calendar. Not that meals on other days were awful, far from it, we were very lucky to have a fantastic school cook. Yet there was something exciting about Pancake Day. More than likely it was the novelty of it. I don't remember having pancakes on any other day of the year, but we certainly made up for it on Pancake Day! As well as pancakes for school lunch there was then the treat of helping to make some more when we got home. And of course eating as many as we could manage.
A squeeze of orange or lemon juice and a sprinkling of sugar was and still is my favourite way of eating pancakes. Although it has to be said, smoked bacon and maple syrup comes a close second. With chopped bananas, vanilla ice cream and sticky toffee sauce in the runners up position ...
