Bircher Muesli

Bircher Muesli

 

Makes approx 5 servings

Recipe-Page-Ingredients

150g Gluten Free Rolled Oats
50g Pumpkin Seeds
75g Dried Apricots, roughly chopped
25g Sultanas or Raisins
15g Raw Coconut Chips
150g Macadamia Nuts
375ml* Water or Rice Milk
1 Tsp Vanilla Extract


* You may need more liquid depending on the consistency you prefer - reserve judgement until it has had an overnight soaking though.

Method-1

Place the oats, pumpkin seeds and dried fruit in large bowl and mix together.  Blend the macadamias with the water or rice milk and vanilla extract until creamy.  It won't be totally smooth but that is fine for this recipe.  Pour the macadamia milk over the dry ingredients and mix together.  Cover and refrigerate overnight.

Method-2

Serve with fresh or stewed fruit.

 

The muesli will sit happily in the fridge for several days so adjust the quantities according to your needs, I usually make a fresh batch a couple of times a week.
