Serves 4-6
Ingredients
100g Fresh Coconut
125g Cucumber
150g Mango Flesh
3 Tbsp Coconut Water
1 Tbsp Lemon or Lime Juice
1 Handful of Coriander, chopped
1 Handful of Mint, chopped
Salt & Freshly Ground Black Pepper
Method
Coarsely grate the coconut and place in a bowl. Deseed the cucumber and peel, if desired. Cut into small batons and add to the bowl of coconut. Cut the mango into smallish chunks and add to the bowl. Add the remaining ingredients and mix together. Check the seasonings and leave at room temperature for 15-30 minutes to allow the flavours to combine.
