
Serves 4

275g Thinly Sliced Courgettes
¼ Red Onion, finely sliced
Finely Grated Zest of 1 Lemon
1½ Tbsp Lemon Juice
3 Tbsp Olive or Rapeseed Oil
½ Tsp Capers, rinsed
5g Tarragon Leaves
Sea Salt & Freshly Ground Black Pepper

Place the courgette slices, red onion and lemon zest in a bowl. Pour over the lemon juice and olive or rapeseed oil and mix well to combine.

Just before serving, roughly chop the capers and tarragon leaves together and stir through the salad. Finally, season to taste.
