Dairy Free Coconut Blancmange with Mango, Blueberries & Passion Fruit

Dairy Free Coconut Blancmange 

 

Dairy Free ~ Egg Free ~ Soy Free ~ No Added Sugar


Serves 4


Ingredients

 

500ml Coconut Milk*

30g Cornflour

30g Sweet Freedom Natural Sweetener (mild)

1 Tsp Vanilla Extract

2 Sheets of Gelatine

 

Flesh of 1 Mango, diced

Seeds & juice of 2 Passion Fruits

100g Blueberries

Dried Coconut Flakes, lightly toasted

 

*Most tins of coconut are only 400ml but it is so rich that you can get away with making it up to 500ml with water if you don't want to open a second tin.

 

Method

 

First of all, soak the gelatine in cold water, then place the cornflour in a pan and gradually whisk in the coconut milk.  Bring up to the boil, whisking continuously and as soon as the mixture thickens, remove from the heat.  Add the Sweet Freedom, vanilla extract and strained gelatine and stir until the gelatine has dissolved.

 

Divide the blancmange mixture between 4 serving dishes.  Leave to cool and then place in the fridge and leave to chill overnight.

 

To serve, top each dish with the fruits and scatter with a few coconut flakes.
