No Added Sugar Plum Jam

Enjoy guilt free no added sugar jam made with Sweet Freedom natural sweetener.


Makes approx 1.15kg 


Ingredients


1kg Plums

125ml Water

750g Sweet Freedom Natural Sweetener (Mild)

175g Pectin (Certo)



Method


Before you start to make the jam, place a small plate in the fridge.  You will need this later to test the setting point of the jam.


Quarter the plums and remove the stones.  Place in a preserving pan with the water.   Bring up to the boil and then simmer on a low heat until the plums have disintegrated into a thick puree and the skins are tender.


Add the Sweet Freedom, bring up to the boil and boil rapidly for 5 minutes.   Stir in the pectin and boil rapidly for a further 5 minutes.


Depending on the ripeness of the plums and the length of time they’ve been cooked for, the times to reach setting point may vary.   As the jam reaches setting point the consistency becomes thicker so test earlier if necessary. 


Test the setting point by pouring a little of the jam onto the chilled plate, return the plate to the fridge for a couple of minutes then push the jam with your finger, if the surface crinkles it has reached setting point.   If it doesn’t crinkle, boil for a couple more minutes and test again until setting point is reached. 


Pour into sterilised jars and seal whilst the jam is hot.
