Gluten Free ~ Dairy Free ~ Egg Free ~ Soy Free

Makes 12-13 biscuits

Ingredients

150g Gluten Free Rolled Oats

75 Rice Flour

2 Tsp Gluten Free Baking Powder

90g Olive or Rapeseed Oil

65ml Water

¼ Tsp Sea Salt

Poppy Seeds, to sprinkle on top

Method

Preheat the oven to 2oo℃/Fan 180℃ and line a couple of baking trays with non stick parchment.

Place the oats, rice flour, baking powder, oil, water and salt in a food processor.  Blitz until everything is combined.  Using your hands, bring the mixture together into a ball and place on a piece of cling film.  Top with another piece of cling film then roll the dough, between the two sheets, until it is about 5mm thick.  Peel off the top layer of cling film and cut the dough into rounds with a 7.5cm (3") round cutter.  Use a palette knife to carefully transfer the biscuits to the baking tray.  Repeat with the remaining dough.  It should make 12-13 biscuits.

Sprinkle the biscuits with poppy seeds and bake in the preheated oven for 25 minutes or until pale golden brown.  Transfer to a cooling rack and leave to cool.
