Strawberry Mousse

Strawberry Mousse 2 Small with Copyright


Fresh strawberries are combined with low fat Greek yoghurt and Sweet Freedom to make a light and healthy fruit mousse.


No Added Sugar


Serves 4

 

Ingredients


300g Hulled Strawberries

50g Mild Sweet Freedom

3 Sheets Gelatine

100g 0% Fat Greek Yoghurt

1 Egg White

Strawberries, for decoration


Method


Blend the strawberries until smooth and sieve to remove the seeds.  Stir the Sweet Freedom into the strawberry puree.


Cut the gelatine leaves into small pieces and soak them in cold water for about 10 minutes or until they are soft.  Spoon a little of the strawberry puree into a pan and heat gently, without boiling.  Take the pan off the heat.  Drain the gelatine and add the soaked leaves to the pan, stirring until the gelatine has all dissolved.  Stir the gelatine mixture into the strawberry puree.


Fold the Greek yoghurt into the strawberry puree.  Whisk the egg white until it forms soft peaks and also fold into the strawberry mixture.  Divide between 4 glasses or small dishes and leave to set in the fridge overnight.


Decorate with fresh strawberries to serve.
